Ingredients Needed
- 1 raw beet, diced
- 1 Golden or other apple, diced
- 1 small red onion, diced
- Balsamic vinegar (just enough to coat)
- 1 lime
Directions
- Place all ingredients in a bowl and mix to coat all pieces.
- Squeeze the lime over top.
- Feel free to experiment with adding whatever other fruits and vegetables sound good to you. Strawberries for example would be great during the season. There are also different types of balsamic vinegars such as white balsamic which has more of a sweet-tart fruity flavor. Make it a spring time resolution to try new flavors and enjoy the experience, even when they don’t turn out to be your favorite.
